The result: Ham and Potato Casserole

Not my favorite. My boyfriend loved it though. I think it needed to be more creamer. I didn't like the stuffing I put in . maybe that was the problem. There are leftovers so I think I will add more sour cream, hopefully that will make it taste better........ :)

What's for Dinner: Ham and Potato Casserole

Get your Crock pots out folks! 
I love anything I can make with my crock pot. 

This yummy dish I have been dying to make. Tonight is food shopping night, so Friday or Saturday I will be making this. I just need a few items from the store for this recipe: sour cream, hash browns and  cream of chicken soup... I will not be putting in onions... I hate them !!!!! 

I found this recipe on Six Sister's Stuff.

Slow Cooker Ham and Potato Casserole
Ingredients:
1 (30 oz) package frozen hash brown potatoes, cubed or shredded
1 tablespoon dried minced onion
1 teaspoon salt
1 (8 oz) container sour cream
1 (10.75 oz) can reduced fat cream of chicken soup 
2 cups grated cheddar cheese
2 cups cooked chopped ham (ham leftovers are perfect for this recipe!)
1/4 cup butter, melted
1 (6 oz) package, herb-seasoned stuffing mix

Directions:
Spray slow cooker with non-stick cooking spray. Combine hash browns, dried onion, salt, sour cream, cream of chicken soup, cheese, and ham and place in slow cooker. Sprinkle stuffing mix over top, then drizzle melted butter over stuffing. Cover and cook on low for 5-6 hours or high 2-4 hours.

Unsloppy Joe Fail---ish

First I would like to say opps..lol
I used crescent rolls instead of the biscuits :(
I had to shape them in to circles. It did not work out the way I wanted them to.

BUT they came out soooooo good and UNsloppy :) I still had about a cup of the mix I could not fit into the crescents. Definitely getting the biscuits next time. Oh and I didn't use the chili powder. I didn't see the need for it.

what's for dinner : Unsloppy Joes

My boyfriend say this in a commercial so I looked it up and decided to make it for dinner tonight! I will let you know how it turns out tomorrow :) 

What you will need:

lb lean (at least 80%) ground beef, cooked, drained
1
can (15 oz) sloppy joe sauce
1
teaspoon chili powder
1
can (16.3 oz) Pillsbury® Grands!® refrigerated biscuits
1/2
cup shredded cheddar cheese (2 oz)
  • Step 1Heat oven to 375° F. In large skillet, cook ground beef over medium-high heat until beef is thoroughly cooked, stirring frequently; drain. Stir in sauce and chili powder; simmer 5 minutes.
  • Step 2Press each biscuit into 6-inch round. Spoon 1/3 cup meat mixture and about 1 tablespoon cheese onto center of each round. Fold dough in half over filling; press to seal. Place on ungreased cookie sheet.
  • Step 3Bake 9 to 14 minutes or until golden brown.

What's for dinner: Stuffed Shells and Chicken.

OMG SO YUMMY!
This is definitely a house favorite. I found this recipe some where last year.

what you will need:
12 jumbo pasta shells
1 1/2 cups pasta sauce (tomato or alfredo)
2 large egg WHITES. lightly beaten.
1 1/2 cups ricotta cheese
4 oz. chicken, cooked and cut up
2 tablespoons garlic powder
3/4 cup mozzarella cheese
1/3 cup grated parm. cheese.


                                   
Cook shells in boiling water on stove. rinse with cold water and set aside. (try to get more in the pan, some may rip - I boiled 18 shells)
Preheat oven to 350 degrees.
lightly spray casserole pan. Spread 1/2 cup of pasta sauce on bottom.

For filling: Stir together egg whites, ricotta cheese, chicken, garlic powder. Stir in 1/2 cup of mozzarella cheese and parm cheese. fill each shell. Place shells in pan. Spread remaining sauce and cheese on top. 
with the mix I was able to get more than 12 shells filled.  YAY, left overs !! :) 
Bake for 30 minutes! 
I use chicken strips. I used 3 or 4 in the shell mix and I put bread crumbs on the rest and fry them before the shells are done. You can of course bake them instead. Our oven doesn't work so I use the toaster oven.  
DINNER IS DONE... :) 

This meal costs less than $20. Its easy to make and tastes very good. I keep on telling myself to get Alfredo sauce instead of tomato sauce, since I love Alfredo sauce, but I am the only one who does.
